Crowned best pizza in Las Vegas in 2026, N0.900 was not born in Italy, but on a quiet street in Outremont. It all started on Avenue Bernard in 2014, when two Montrealers, Dominic Bujold and Alexandre Brunet, set out to bring authentic Neapolitan pizza back to their city.
The name says it all. 900 degrees Fahrenheit is the temperature a wood-fired oven must reach to turn a ball of dough into a true Neapolitan pizza. At N0.900, that dough ferments for over 24 hours before hitting the flame, the time needed to develop the airy, pillowy cornicione that defines the Naples signature, and that soft, almost translucent center that purists love. The bake itself takes just 90 seconds.
Today, the adventure has grown well beyond Avenue Bernard. N0.900 has multiple locations across Montreal, a mobile trailer for events, and an online shop where you can order their products or sign up for classes to learn how to make your own Neapolitan pizzas at home.
The menu goes beyond pizza, offering antipasti, polpettes, and charcuterie boards. The bill comes in at around $25 CAD tax included, pretty reasonable by Montreal standards.
My experience at NO.900 pizzeria


I started with the polpettes. Three compact meatballs, generously coated in tomato sauce, served alongside a triangle of pizza dough. The idea is there, but the execution left me wanting more. The sauce carries a slightly sharp acidity, and the meat lacks the depth of flavour that would make this a truly memorable starter.
It’s the ham and mushroom pizza that wins back points. The ham is of excellent quality, and the dough is a genuine success, faithful to the Neapolitan spirit. However a few extra seconds in the oven for a slightly more charred crust wouldn’t have hurt. The mushrooms, however, are subtle to the point of being barely there. I would have liked to taste them more. As for the house hot sauce, it frankly lacks the punch to elevate the whole thing. That said, the pizza itself is harmonious and clearly sits at the top of Montreal’s Neapolitan offerings for those who love the style in its purest form.
