I often enjoy getting into the kitchens of big hotels. Where great chefs capture the local culture for the good taste of tourists. Sometimes a businessman, sometimes a family, we highlight the love and respect for traditions with a touch of high quality.
La Terraza del Pardo is the restaurant in the Hilton in Miraflores. I sat down at this table in one of those big armchairs you could almost disappear into. In a chic setting, next to a large bar with an old coffee machine. Gold-coloured ventilation pipes modernise the furniture and plants separate the various tables. A large bush hides the view of the street from the terrace, which has large sofas and a heater for when the weather does not allow you to enjoy the sun. The menu offers a wide variety of local dishes, such as causa or ceviche, as well as a variety of desserts and breakfasts for all times of the day. I will focus on the tuna tartare for 21 soles and the equally typical lomo saltado for 44 soles.
The Tuna Tartare
The tartar comes with a salad of black quinoa, avocados and mango. The pieces of tuna are roughly chopped and mixed with the previous ingredients. However, the dish is sour enough to be surpassed by the freshness of the products.
Lomo Saltado
My next dish is none other than the typical lomo saltado. The meat is of high quality, one of the tenderest I have had in Peru. The presentation is really interesting for a dish like this. The chopped onions are a little too present. I was a little disappointed that the rice was served on a separate plate rather than being integrated into the dish.
In general, the Terraza is a correct place to get a first taste of Peruvian cuisine at a price slightly higher than other restaurants.
