Behind its modest storefront, Les Nouilles de Lan Zhou has, over the years, become a true reference point in Montreal’s Chinatown. The proof? The line of eager foodies that quickly builds up at the entrance come mealtime. There’s no endless menu here: people come first and foremost for the hand-pulled noodles, stretched with dexterity before your eyes and served in different sizes to match your preference.
The menu is deliberately limited: the house specialty, Lan Zhou beef noodle soup, takes center stage, accompanied by a few classics like dandan noodles or Zhajiang noodles. You can have them spiced to your liking. Seated at the counter, I get to enjoy the show: the chef pulling noodles with almost hypnotic precision while the aroma of chili peppers drifts out of the kitchen. The setting is simple. This isn’t the place to linger with a large group; the space is just too small.
As for the flavors, my beef broth left me with mixed feelings. Prepared quickly, it lacked some depth and roundness, as if simmering time had been sacrificed for speed. The chilies, sprinkled on top rather than cooked into the broth, didn’t deliver the richness I was hoping for. The noodles, on the other hand, lived up to every expectation: firm texture, authentic taste, and instant satisfaction from the very first bite.
